Vegetarian ‘Pyttipanna’

Pyttipanna is the name of a Swedish dish which means small pieces in a pan. And basically that what it is, chopped root veggies fried in a pan. Tsubako’s version is grilled in the oven instead. Pyttipanna is usually served with a fried egg and pickled beetroot. The recipe for the pickled beetroot will be uploaded soon. If you’re a vegan just omit the fried egg.

Pyttipanna, 4 servings

  • 500 g potatoes
  • 250 g carrots
  • 250 g parsnip
  • 250 g pumpkin
  • 4 soya sausages
  • 2 onions
  • Salt, pepper, turmeric
  • 250 ml  vegetable oil for frying
  • 4 eggs
  • Pickled beetroot
  1. Rinse, peel and dice all vegetables exempt for onion.  Dice the sausages.
  2. Preheat the oven on 180C.
  3. Put the chopped ingredients in an oven tray and add oil and spices. Put them in the oven.
  4. Dice the onions and add to the other  ingredients 15 minutes after they have been in the oven.
  5. Cook for additional 15-20 minutes or until vegetables are cooked. Stir now and then to cook evenly.
  6. Before serving add the parsley.
  7. Fry the eggs.
  8. Serve the pyttipanna with egg and pickled beetroot. Recipe will be added soon!

ピタパーナ 4人前

  • ジャガイモ500g
  • 人参250g·
  • パースニップ250g·
  • カボチャ250g
  • ベジタリアンソーセージ4 もしくは 厚揚げ豆腐
  • タマネギ2
  • 塩、こしょう、ターメリック
  • サラダ油250ml
  • 卵4個·
  • ビートルートの漬け物
  1. タマネギ以外の野菜を洗いサイコロ状に刻む。ソーセージもしくは豆腐もサイコロ状に刻む。
  2. オーブンを余熱180℃に設定しておく。
  3. オーブントレイに刻んだ野菜,ソーセージを入れ、油とスパイスを入れ混ぜる. オーブンに入れる。
  4. タマネギも刻み,15分経った後にオーブンに入れる。
  5. 更に15−20分野菜が柔らかくなるまでオーブンに入れる。すべての材料が均一に焼けるように混ぜる。
  6. 盛りつける直前にパセリを振りかける。
  7. 目玉焼きを焼く。
  8. ビートルートの漬け物を添えていただく。
