Savoury Vegan Almond Balls

 

This is a vegan version of the Swedish vegan balls called ‘Mandelfrikadeller’. Enjoy!

Vegan savoury almond balls, 30 balls

100 g ground almonds or 100 g almond flour
25 g bread crumb
55 g gram flour/ soy flour
1 grated onion
1 teaspoon salt
½ teaspoon pepper
1 teaspoon turmeric

Flax ‘eggs’:
3 tablespoon ground flax seeds
6-7 tablespoon hot water

1 l water for boiling
1 teaspoon dried herbs
1 teaspoon tomato purée

2 tablespoon vegetable oil for frying
Few drops of soya sauce

1. Start by making the flax mixture. Stir ground flax seeds with hot water.  Leave to swell for about 5 minutes.

2. In a bowl mix almond flour/ground almond, bread crumb, gram flour, grated onion, turmeric , flax mixture, salt and pepper.

3. Mix into a dough. Make sure your dough is smooth and possible to shape but not crumbly. If crumbly add little bit of water and if too loose add a bit more of gram flour. Shape dough in balls. Each ball about 1-1,5 teaspoon of dough.

4. Bring 1 litre of water to boil in a big pot with some dried herbs or bouillon stock of your choice.

5. Add balls by putting them on a strainer ladle and gently lowering ladle in water. Add about 8 balls at a time. Let balls boil for about 5-7 minutes. To make sure that your balls don’t break, just make one ball and boil it to see if it holds. If it breaks add more flax mixture or soy/gram flour.

6. Once they are ready they swell and float on surface. Gently lift them up with strainer ladle.

7. In a frying pan fry the balls for 2-3 minutes. Add few drops of soya sauce to make them darker.

ビーガンアーモンドボール30個分

·       アーモンドもしくはアーモンドプードル100g
·       パン粉25g
·       ひよこ豆粉もしくは大豆粉55g
·       卸しタマネギ一個
·       塩小さじ1
·       胡椒小さじ0.5
·       ターメリック小さじ1
フラックスミックス:
·       すりつぶしたフラックスシード(なければすりごま可)大さじ3
·       湯大さじ6−7
·       茹で様の水1L
·       ドライハーブ小さじ1
·       トマトピューレ小さじ1
·       炒め様の油大さじ2

·       醤油適量

  1. フラックスミックスから作り始める。フラクスシードを湯と一緒に混ぜる。5分ほど置き、水分を吸い込ませる。
  2. ボウルにアーモンド粉、パン粉、ひよこ豆粉、卸したタマネギ、ターメリック、塩こしょうとフラックスミックスを入れ混ぜる。
  3. 生地を混ぜ込む。生地がなめらかにまとまるようにする。 少し水を加えて滑らかにするか、柔らかすぎる場合は少し粉を足す。
    ボールの形に整える。小さじ1−1.5杯分の生地を使う。
  4. 鍋に湯を沸かし,ハーブもしくはスープストックを入れる。
  5. と上に浮いてくる。レードル等で丁寧に掬う。
  6. ボールをレードル等を使い、鍋に入れていく。一度に8個ずつ入れる。5−7分程火を通す。火が通る ポイント:ボールをまず一つ作り、茹で、崩れないか確認して下さい。型くずれするようなら、フラックスミックス、もしくは粉を足して下さい。
  7.  フライパンに油を引き、2−3分炒める。 醤油をまぶし絡める。
